Sweet Potato Brownies

Today - February 22nd is the National Sweet Potato Day and I decided to use this root vegetable for a healthier alternative to brownies. When it comes to healthy eating, I know that some of you think of chicken and broccoli and I’m aware that we can easily get bored of them. And I hate when people say that they can’t actually start eating healthy because the food is disgusting. In my opinion, you have to think outside the box to make eating more enjoyable. There are many high-quality foods that not only can provide you with

lots of vitamins and minerals but also are high in fiber and low in fat. So why don’t we use these foods as an alternative to our favourite ones? That’s why I wanted to show you a quick and simple way to make one of my top desserts beneficial to your health. The sweet potato is an excellent source of vitamin A, which supports good vision, the immune system and bone growth. It is also a good source of vitamin B-6, magnesium and vitamin C. How can you not love sweet potatoes now?

Ingredients

  • 250g Sweet Potato
  • 3 Egg Whites
  • 30g Rolled Oats
  • 30g Protein Powder
  • 50g Dark Chocolate
  • 1/2 Orange Zest
  • 1tbsp Cinnamon
  • 1tsp Baking Powder

01 Start with this

Bake your sweet potato. When it’s done cooking, make sure you pill off the skin and mash it till you end up with puree consistency.

02 Then

Mix all ingredients together. Make sure you melt your dark chocolate before putting in into all other ingredients.

03 Lastly

Bake for 25min at 350F/180C. Remove from oven and let them cool down for 10min. Then you can choose whatever you want as a topping. I prefer to melt 10-15g of dark chocolate and enjoy my brownies this way! YUM!
